INDULGE. THAT IS ALL.

It is cold outside and I want comfort food.

But with comfort food comes comfort dessert. I just had to share this ridiculously easy but outrageously decadent recipe.

The peppermint crisp pie is a South African staple and no self-respecting household would have done without/survived without one for more than 8 weeks at a time..

 

Ingredients~

2 packets of digestive biscuits (I use chocolate digestives, just because I can..)

7 tablespoons butter (melted)

1 and a half cans of caramelised sweetened condensed milk

peppermint crisp bars (grated) or peppermint chocolate

500 ml whipped cream

 

Method~

Crush the biscuits and then put them in a bowl with the butter. Press them down on the base of a pie dish of your choice and also a little bit up the sides. Put it in the fridge to set.

Beat the caramel in a bowl with a wooden spoon until smooth and then carefully spread over the biscuit crust, trying not to lift any of the biscuit crumbs.

Whip the cream until it forms soft peaks, taking care not to over whip.

Spoon this over the caramel to cover the whole surface.

Now scatter with the grated/crumbed peppermint crisp chocolate (I like to keep mine quite chunky)

Put it in the fridge until you are ready to serve it.
